6 Easy Ways To Cook Eggs

I've noticed recently that when my fridge starts looking empty, I've always got eggs. I might investigate this mystery more deeply someday, but in the meantime I'm making some creative egg meals. Eggs are such a flexible food, and they pair well with all kinds of ingredients. Here are a few easy recipes that have helped me reduce my egg population.

Over-Easy Egg Sandwich with Tomato and Cheese

  1. Fry an egg over easy, leaving the inside runny.
  2. Place the egg between two pieces of bread, and top with cheese and a tomato slice. Add mayo (or butter) to the bread if you like.
  3. Before serving, cut the sandwich down the middle and let the runny yoke spread all over your bread.

Crustless Quiche

You might have the ingredients for quiche, but not the crust. Good news: it tastes just as good without the crust.

  1. Preheat oven to 350 degrees and mix 6 eggs, 1/4 cup milk, onions, tomatoes and any other "leftover" ingredients like lunchmeat, cheese, or shredded carrots.
  2. Pour into greased pan, and bake until an inserted knife comes out clean, about 20 to 30 minutes.

Egg Burritos

So easy. It's good for a quick meal and the kids will love it too.

  1. Scramble eggs and throw them into a burrito wrap.
  2. Add sour cream, salsa and/or beans and enjoy.
