3 Recipes for Slow-Cooked Chili

It's hard to screw up. Chili is one of those meals you slow cook to perfection adding ingredients as you go. A little of this, a little of that and you’ve created much more than just dinner it's a meal you can enjoy all week. If you're looking for some different recipes to try this year, look no further. We rounded up some unusual yet delicious chili recipes sure to change the way you think about chili.

Fiery Adobo Turkey Chili

What you'll need: 

  • 3 tablespoons of extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 tablespoons of minced garlic
  • 1 tablespoon kosher salt
  • 2 tablespoons of chili powder
  • 1 tablespoon of dried oregano
  • 2 tablespoons of tomato paste
  • 1 (7 oz.) can chipotle chile in adobo sauce
  • 2 pounds of ground turkey
  • 1 (12 oz.) Mexican lager-style beer
  • 1 (14.5 oz.) can of peeled tomatoes, with their juice
  • 1 can of dark red kidney beans
  • 1 can of light red kidney beans
  • Pinch of cayenne pepper spice (or more, to amp up the spice level—recommend 2 pinches))
  • Cheese and oyster crackers to garnish 

Directions:

  1. Heat olive oil in a large skillet on medium heat. Add onion, garlic, salt, chili powder and oregano. Stir and cook until fragrant. (3 minutes or so)
  2. Stir in the tomato paste and chipotle chili in adobo sauce—cook one minute more. 
  3. Add turkey, breaking it up as you stir, and cook until meat is no longer pink/raw. (12 minutes or so)
  4. As the meat cooks, add the peeled tomatoes and both cans of beans to your Crock Pot, set on low temperature. (5 minutes) 
  5. Add beer to tomatoes and beans. (Continue to heat on medium)
  6. Once turkey meat is fully cooked, add the skillet's contents to the contents simmering in the Crock Pot.
  7. Allow the ingredients to cook for an hour (or more).
  8. Add pinch (or more) of cayenne pepper spice to add heat to your taste preference.

When ready, serve in bowls, with cheese and crackers to garnish.
