3 Recipes for Your Secret BBQ Sauce

In the United States, barbecue sauce can be as diverse and region-specific as wine is in France or Italy. Each sauce style boasts its own secret ingredient and lends itself to a taste so specific that connoisseurs can identify its roots by sight, smell and taste.
The good news is that barbecue sauce is far easier for the average amateur cook to make than wine is for a wannabe vintner.
Here are three quick and easy barbecue sauce recipes, each representing a famous barbecue region from around the country. Follow the recipes exactly if you want regional authenticity—or adjust the seasonings to your own taste and make your own special sauce.
Homemade Kansas City-Style Sauce
CHOW.com's Dr. BBQ provides this quick (15 minutes to prepare) Thick and Sticky Kansas City-Style Barbecue Sauce.
Ingredients:
- 2 cups ketchup
- 1 cup dark molasses
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground mace
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon liquid smoke (optional)
Combine all ingredients in a saucepan over low heat. When the molasses dissolves, the sauce is ready to apply to baby back ribs, pulled pork or whatever barbecue-related meat your heart desires. Store extra sauce in a covered jar or plastic bottle in the refrigerator. Yields approximately 3 1/2 cups.
