Meatless Recipe - Curried Tofu Scramble
Ingredients:
- 1 package extra firm tofu
- 1/4 cup finely chopped green onion
- 1/2 tsp chopped garlic
- 1/4 cup grated carrot
- 1 tbsp extra virgin olive oil
- 1/2 tsp prepared yellow curry powder
- 1/2 tbsp salt (preferably sea salt)
- Freshly cracked black pepper to taste
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1/4 tsp ground ginger
- 1 tbsp fresh lime juice
Try this simple twist on tofu that adds the taste of Eastern spices for a healthy and flavorful dish.
Makes two servings—double recipe for 4 people.
Even if you and your family are carnivores, it’s not a bad idea to have a meatless meal every so often, even if it’s just for a change of pace. Whether you’re looking for something different or trying to keep vegetarian and vegan family and friends happy and well fed, here are two meatless entrées that are low fat, delicious and extremely easy to make.
Garnish options:
- Freshly chopped cilantro
- Diced tomato
- Greek yogurt

Directions:
Step 1
Slice the block of tofu width-wise down the center into two thin pieces.
Step 2
With a clean dish towel, wrap the two slices of tofu with a layer of towel between the slices and set on a plate.
Step 3
Place another plate upside down on top of the tofu and place a heavy can or telephone book on top of the plate for about 30 minutes to squeeze liquid out of the tofu.
Step 4
After pressing the liquid out of the tofu, crumble it finely by hand into a large mixing bowl.
Step 5
Add into the bowl green onion, garlic, carrot, salt and dried spices and mix well.
Step 6
In a sturdy sauté pan, heat olive oil over medium heat and then add tofu mixture. Don’t start stirring this right away. The tofu needs to cook for 2-3 minutes to cleanly come away from the pan. If you start stirring too early, the tofu will stick to the pan and there will be bits of burnt tofu mixed in with your scramble.
Step 7
Keep stirring until the tofu is roughly the same consistency of hard scrambled eggs, then add lime juice and turn off heat.
Step 8
Serve on individual plates or on one large serving platter topped with diced tomato, cilantro and a dollop of Greek yogurt.
