A day that ends with stale fig newtons isn’t a day at all, but cap off dinner with one of these homemade options and the family will go to bed thinking of a bright tomorrow. And best of all, the kids can pitch in to help.

If pudding to your family means a plastic cup of unrefrigerated goop you find in the baking-products aisle, that’s just sad. True pudding is a dessert to be savored, from the smooth skin on top to the creamy bottom. Allrecipes.com has more pudding recipes than you can shake a spoon at, with variations from butterscotch to fruit to bread, and everything in between.
But if your kids are like most, chocolate will top the list—and why not throw in a little of that other family favorite, peanut butter? This recipe even boasts low fat and calorie count (upgrade to whole milk and real whipped cream if you’re in a richer mood).
Peanut Butter Chocolate Pudding
In a small bowl, mix 2 tablespoons cold fat-free milk and 2 tablespoons reduced-fat chunky peanut butter until smooth. Fold in 3/4 cup reduced-fat whipped topping; set aside. In a mixing bowl, beat 1 (1.4 ounce) package sugar-free, chocolate-flavored instant pudding mix and 2 additional cups milk until blended, about 2 minutes. Let stand for 5 minutes. Spoon half of the pudding into six parfait glasses or bowls; top with peanut butter mixture and remaining pudding. Garnish with remaining whipped topping.
