Incredibly Easy One-Pot Meals

One-pot recipes mean less time preparing, less time over the stove and less time cleaning up. What parent wouldn't be grateful for a break from the time it usually takes to prepare the evening meal?
And these meals are easy too. The only tools you need are a cutting board, a knife and a large stock pot.
One-Pot Frittata
Ingredients:
- 2 tablespoons olive oil
- ½ yellow onion, chopped
- 1 clove of garlic, minced
- 1 small orange or red bell pepper, chopped
- 5 to 6 cherry tomatoes, cut in half
- 1 small container button mushrooms
- 8 eggs
- 1 tablespoon sliced chives
Directions:
- Preheat your oven to 350 and be sure the pot you are using is oven safe.
- In a 10-inch oven-safe skillet warm the olive oil on med/high heat.
- Once the olive oil is hot, add the onion, garlic, bell peppers, garlic and mushrooms. Season to taste.
- Cook for about 10 minutes or until the onions are tender.
- Turn the heat to low and add the tomatoes. Cook for about 2 or 3 minutes or until the pan is about dry.
- Stir in the chives, pour in the eggs and stir until all ingredients have been coated with the eggs.
- Cook for another 10 minutes and then transfer the skillet to the middle rack of the oven and cook for 20 minutes.
- If you want to brown the top, turn the broiler on low for the last 5 minutes of the cooking time.
