Quick and Easy No-Bake Desserts

Mint Cream Dessert
Ingredients:
- 3/4 cup butter, divided
- 1 package chocolate cream-filled sandwich cookies, crushed
- 2 quarts mint ice cream
- 1 1/2 cup milk chocolate chips
- 1 cup confectioners' sugar
- 3/4 cup evaporated milk
- 1 (16 oz) container of Cool Whip
- chocolate syrup, sprinkles (optional)
In a saucepan or microwave, melt 1/2 cup of the butter. Stir in cookie crumbs and mix well to combine. Press into an ungreased 9 x 13-inch pan. Freeze for about 30 minutes, or until firm. Meanwhile, remove ice cream from freezer to soften. Spread ice cream over the crust. Return to freezer until firm. In a saucepan, combine chocolate chips, confectioners' sugar, milk and remaining butter. Bring to a boil, stirring frequently. Cook and stir for 3-5 minutes or until thickened. Cool the mixture to room-temperature.
Once the mix has cooled, spread it over the ice cream and return the pan to the freezer. Once the chocolate layer has hardened, spread the whipped topping over the top. The dish will not be full. Cover lightly and freeze. Remember to remove the dessert 20-30 minutes before you intend to serve. For an added touch, drizzle the top with chocolate syrup, or colorful sprinkles.
