Quick and Easy Make-Ahead Freezer Meals

When you're too busy to cook and the family is running in five directions, thawing a meal you've already prepped can come in handy. Take just 15 to 20 minutes when you've got some time on the weekend to prep these full meals, and you'll be ready for anything that comes up during the week.

Chicken Broccoli Casserole

This meal will satisfy any picky eater. It's quick and simple to prepare and freeze, and when you're ready to cook you can just pop it into the oven, baking it at 350 degrees for one hour. Perfect for those busy nights.

Ingredients:

  • Four boneless chicken breasts
  • Salt and pepper
  • One 2-pound bag chopped broccoli
  • One onion
  • One egg
  • One 2-pound block Colby cheese
  • One small can cream of mushroom soup

Directions:

  1. Boil boneless chicken breasts until tender. Let cool and cut into small sections.
  2. While chicken breasts are cooking, boil broccoli until tender and drain well.
  3. In a large bowl, mix together egg, mushroom soup, salt and pepper. Set aside and dice onion into small pieces.
  4. Cut Colby cheese block in half and set one-half to the side. Cut Colby cheese into tiny sections.
  5. Mix in the mushroom soup mixture until well blended. Add the broccoli and chicken and stir until completely mixed.
  6. Pour mixture into an oven- and freezer-safe container. Slice the other half of the Colby cheese.
  7. Place the slices across the casserole.
  8. Cover and place in freezer until ready to bake.
