5 Quick & Easy Gluten-Free Recipes

More and more people these days are undergoing a gluten allergy test and being told by their doctors to switch to a gluten-free diet. A small percentage are being diagnosed with Celiac disease, a serious gluten intolerance, while others exhibit milder gluten allergy symptoms—a sensitivity that requires them to monitor how much they consume. Still others simply are switching to a gluten-free diet because they say it makes them feel healthier.

Whatever your reason for being gluten-free, finding easy gluten-free recipes can be a bit of a hassle. Gluten is a protein found in certain types of grain—such as wheat, barley and rye—and therefore in many foods, from bread to bagels to pasta to a surprising number of others. Here are five easy gluten-free recipes you can make at home and take as leftovers for lunch at the office.

Chicken Bean Tortillas

This simple recipe is easy to make at home or combine at the office:

Ingredients:

  • 2 corn tortillas
  • 1 cup shredded chicken (you can use leftover chicken or rotisserie chicken)
  • 1 tablespoon mayonnaise
  • ¼ cup cheddar cheese
  • ½ cup canned black beans
  • Guacamole or red or green chile

Directions:

  1. Divide chicken, mix with mayonnaise and place equal amounts on each tortilla, top with black beans and cheddar cheese.
  2. Choose to bake in the oven at 400 degrees, use a toaster oven on the highest setting or enjoy this dish cold. If you choose to bake this recipe, it only takes around five minutes so keep an eye on its progress to avoid burning.
  3. Top with guacamole or chile.
