5 Quick Recipes for Indoor Grills

Yes, that indoor grill you bought is great for grilled cheese sandwiches or panini, but it's also got other tricks up its sleeve. To help you get more from that grill, especially as the cold weather approaches and your outdoor grilling becomes less frequent, here are five recipes for non-sandwich entrees and snacks. And make sure to come prepared with the proper grilling accessories.
Grilled Steak and Mushroom Skewers
A pound of round beefsteak cut into half-inch slices and a half-pound of mushrooms serve as the main ingredients to conjure up delicious grilled steak and mushroom skewers.
- Create a marinade for the meat with 1/4 cup finely chopped onion, 2 teaspoons each of brown sugar and apple cider vinegar, 1 tablespoon of grated ginger root, 1/2 teaspoon of salt, 1/4 of a teaspoon of pepper, 2 minced garlic cloves and 3 tablespoons of olive oil.
- Combine all the ingredients in a Ziploc plastic bag and refrigerate for about 6 hours.
- When you're ready to cook, drain the steak strips and thread them onto six skewers along with mushrooms. When on the grill, turn the steak strips and brush often with marinade.
- Grill for 3 to 5 minutes.
A green salad, some French bread or a melon salad makes a perfect complement to grilled steak and mushroom skewers.
Quick-Fix Chicken Parmesan
Four small pieces of boneless and skinless chicken breasts and 2 tablespoons of shredded parmesan cheese make for a delicious chicken parmesan
- You'll need 1 1/2 teaspoons of extra virgin olive oil, 1/2 cup of marinara or pizza sauce, 2 ounces of thinly sliced or shredded mozzarella cheese and a pinch of black pepper on hand for seasoning.
- Start by lightly coating the sides of the chicken breast pieces with olive oil and pepper.
- On the grill, cook for around six minutes, stopping when the chicken becomes brown on the outside, and moist and fully cooked on the inside.
- Add the marinara or pizza sauce followed by the parmesan and mozzarella as toppings.
- Broil in an oven for around two minutes to melt the cheese and serve.
