Breakfast for Dinner: Your Kids Will Love You

Having six kids makes dinner time a crazy fiasco. One of the best nights in our house is when we have breakfast for dinner. Our neighbors hear the cheers down the street.
Here are some of our time-tested favorites that will have your kids worshiping you.
Banana Pancakes with Peanut Butter
Mash a banana in with the pancake batter. Make the pancakes as usual. When finished, add a syrup that consists of peanut butter, Greek yogurt and a splash of almond milk blended together. Drizzle over the pancakes. Yum, yum, yum
Mexican Corn Pancakes
Remove the corn from the cob. Add the corn kernels to the pancake batter. Cook as usual. Serve the pancakes with a butter that has been flavored with a sprinkle of taco seasoning.
Pumpkin Waffles
Add a half of can of pumpkin pie filling to your waffle mix. Make the waffles as usual. Serve the waffles with chocolate syrup for an extra treat. Add a dollop of Greek yogurt to the top of each waffle.
Seafood Egg Wraps
Grill shrimp that has been sprayed with a light coating of olive oil. Use a sauté pan to make scramble one egg white, mixed with non-fat milk. Add the grilled shrimp and some fresh lemon juice to the egg. Fold together in pan. Cut up some fresh avocado and add to the egg and shrimp. Place the mixture in a tortilla wrap and serve with salsa.
These meals are easy and flavorful. Your kids will love you for giving them breakfast for dinner!
