The Good Stuff: Toasted Marshmallow Milkshake

Forget the campfire when you can enjoy the taste of toasted marshmallows in your very own kitchen. Spike Mendelsohn, former contestant on Top Chef and author of "The Good Stuff Cookbook," features a new spin on the classic milkshake that will be a sure hit with your children.
This legendary shake is made with your typical vanilla ice cream, jumbo marshmallows, whole milk and sour cream but with the use of strategic baking, you get the taste of toasted marshmallow in every sip.
To make this shake at home, Mendelsohn suggests using:
- 1 16-ounce bag of jumbo marshmallows
- 2 cups of whole milk
- 2 cups of creamy vanilla ice cream
- 1 tablespoon of sour cream
While you are gathering up your ingredients in the kitchen, preheat the broiler.
Directions:
- First leave out 4 marshmallows to place on top of finished shake. Spread out the rest of the marshmallows and place on a baking sheet, leaving some space in between marshmallows.
- Place baking sheet under the broiler and cook, stirring once or twice, for approximately 2 to 3 minutes.
- When marshmallows appear to be a golden brown and completely toasted, remove from oven and set aside to cool.
Repeat this step again, but this time use the remaining 4 marshmallows and toast these until they are lightly golden. Remove from the oven and set aside to cool.
Take your burnt marshmallows, milk, ice cream and sour cream and add to a blender. Blend for 5 minutes. Poor into four 8-ounce glasses and finish off each glass with one of the 4 golden marshmallows.
This is an excellent cold treat for a hot summer day and can remind you about those hot nights by the campfire.

Transcript: [Spike] All right. So, we’re going to make the, uh, world-famous toasted marshmallow milkshake. It’s one of our signature shakes. So all we do is this freshly made custard that we have here every day. We spin this every day so it’s super fresh. It’s literally coming right from the cow underneath over there by the custard machine. So, some fresh custard and then we’ve got this amazing marshmallow fluff here. This is like roasted marshmallows. They’re burnt and then curated with milk, Oh, smell that. Do you see that? Oh my god. It’s just some burnt goodness. So put some of that in there. And now this tends to be kind of sweet so I love thinning it, you know, cutting it with some acid, some yogurt. A little bit of simple syrup, some milk, and here we go. Just blending it, hand blending. See this? No friction. The old school Hamilton. So what you want to do, get that, look at that. Oh yeah. Look at that great consistency, the specks. Mix it all around. Oh yeah. Perfect. And then in the fancy cannel watch this: hot water, hot spoon, and then, look at that. We’re going to top it off with some toasted marshmallows. There you go.
